Our Beers

This Butcher features Cryo Citra hops and uses his freeze ray to follow the Cold IPA formula to create a crisp, lagered IPA with the same rounded citrus that comes with the Mad Butcher name.

Our sorceress drank a demonic potion so sour it turned her heart as sour as a lemon. She now enchants us with a smooth sour that brings lemon notes to the nose but finishes with a clean crisp sour bite.

We've gone mad again! We decided to add cherries, raspberries, strawberries, and pineapple to our sour base without caution; This basket-case brew features multiple great fruit flavors and a sour finish.

This beer is a super session-able pale lager made with smooth Mexican corn, classic U.S. grain and a subtle tropical Australian hop note. These international ingredients blend together to make a smooth cerveza that delivers an enjoyable experience for any beer drinker. Our partner, Cerveza Artesanal Del Muerto, is a brewery in Tenancingo, Mexico.

This SMaSH (Single Malt and Single Hop) beer delivers on Pilsner 2-row malt and Motueka hops. The Pilsner malt really lets the tropical lime flavor and aroma of the New Zealand Motueka Hops shine to give you a clean citrus-forward IPA.

What kind of dreamy super citrus juice bomb is this? Some kind of dreamy super citrus juice bomb beer really. A dream inside a dream inside a dream. Oh boy, let’s have a beer.

Before hops drove our Mad Butcher crazy he was into experimenting with hops. This brew uses thiolized yeast and enough hops to make anyone go “mad.”

The leaves turn with the seasons, and harvests all the same. It’s left to us to reap the good stuff, and reward ourselves with a mighty fine beer for nurturing our fields and crops. Do ol’ Leaf Raker a favor and raise a can of this creamy, malty nut brown in his leafy honor!

  SMaSH out a homer at ISG Field with a refreshing MoonDogs brew this summer. SMaSH IPA delivers a light body Citra hop fastball to your taste buds. It will have you howling at the Moon all season.

Our inter-dimensional galactic-space bounty hunter is at it again. Enjoy this crisp and refreshing blonde ale with the light hints of pineapple-strawberry-like flavor. Flavor so good, you'll be wondering if you're in the refreshment quadrant of ... ZERO SECTOR!

Back from the dark side, Dark Sector is our Sector Berry with a blueberry infusion. This Blue-Raspberry version of your favorite inter-dimensional bounty hunter is easy drinking with light, refreshing taste.

Life's not easy for an inter-dimensional galactic-space bounty hunter. But since you're reading this, we assume you're not one, so life is good. Enjoy this crisp and refreshing blonde ale with the light hunts of raspberry. Flavor so good, you'll be guessing if you're in the refreshment quadrant of . . . The Sector Berry!

This fine IPA contains Trident Hops and has endured a cold lagering process that mimics the icy depths of the sea. This mighty hop mellowed by the chill of frigid lagering creates a smooth, subtle and aromatic brew - one that even Poseidon would hunt the depths to taste.

A smooth Session IPA made with Sultana hops, which are known for pineapple, pine, and bright citrus notes. With a pale color and easy-bodied malt base, this "Sultanic serum" may make you feel like a genetically altered super-space solider cyborg.

This delightful sour lifts our traditionally mouth puckering brews to a new head-in-the-clouds drinkability.

Festbier is the beer served at Munich's Oktoberfest. It is a pale lager with a clear Pilsner malt for a light biscuit sweetness and a golden hue. So, if you are out to celebrate Oktoberfest you will really enjoy this beer we brewed for you during the dog days of summer!

This SMaSH (Single Malt and Single Hop) beer delivers on Pilsner 2-row malt and Galaxy hops. The Pilsner malts really lets the intense citrusy flavor and aroma of the Galxaxy Hops shie to give you a clean citrus-forward IPA.

Beware the rogue who pilfers the key to an ancient dungeon for a chance at riches. Much like the locking mechanism to get into the ancient vault. This beer is rich and complex.

The Crooked Rook has flavors of bittersweet chocolate, coffee and caramel that conspire with the hops' floral and woody notes, making this beer one treacherous Rook.

Barrel Aged Russian Imperial Stout., 2020 version.

Cross-Czech Pilsner is a smooth, easy-drinking brew made with traditional ingredients and a modern deke: we have included traditional grain and yeast paired with popular modern hops. This beer is perfect for consuming by the rink, when watching a game at home, or purely for the enjoyment of beer. Cross-Czech has a hint of biscuit (not the puck) and is perfect for your post-game celly.

Rhuby is a smooth tart who is delightfully sour, incredibly sassy, and tougher than anyone this side of the river.

The malt is the key to Organ Grinder with the hops taking a break. Much like its German inspired relatives, you see its brilliant amber color and smell its rich malt base. The flavor follows the aroma, and is toasty with a touch of sweetness and a slight noble hop presence.

Citra and Mosaic hops drive the Mad Butcher wild (and yeah, he was a real person!) and this American IPA delivers them in spades. We don't recommend playing catch with a pig until he keels over, though. Just stick with the beer!

This amalgamation of forest animals is the perfect representation for our Oatmeal Stout! It combines elements of roasted barley, creamy oatmeal, and fully body.

Kato Kato Lager - Helles 5% ABV 18 IBU A crisp, refreshing lager. Kato is an easy drinking, enjoy by all beer, that is perfect for any occasion.

Sam is the face of the taproom and friends to everyone who visits our taproom. Sam is your person for any questions about taproom events or what beers to try. Make sure you say “hi” to Sam the next time you’re in.

Ben Williams

Cellar

Ben runs our cellar area. You will find Ben busy managing the tanks by dumping yeast, hops and doing an awesome job cleaning! Clean tanks make happy beer! When Ben isn’t at the brewery you can find him custom building archtops, ukes, & parlor guitars. He owns Hogbac Acoustics and is an expert in acoustic instrument repair.

You will see Alex brewing in the brewery many nights when you are stopping in the taproom. We hope you get a chance to stop in and meet Alex.

Jace works with all our distributors in each market we sell our beer. Make sure you say hi to Jace the next time you see him out.

Chris Collins

Head Brewer

Chris “Grist the scientist” Collins runs the lab, filters the beer, brews some brew, and enjoys drinks with the crew. He really likes his yeast. They are his beer babies and microbe gathering buddies. Yeasts are vitamins to Grist the Scientist.

Chris found his love for brewer’s yeast as a college student. He is proud to have graduated from Minnesota State University, Mankato’s Bachelors of Science: Microbiology program and to educate a lucky MNSU intern on beer science. He furthered his beer studies through the American Brewers Guild, Intensive Brewing Science & Engineering program.

He plays Dungeons and Dragons and loves maillard reactions. Make sure to come in and say “Hi” to Chris!

Tim Tupy

Co-Founder

Tim Tupy was born and raised in New Prague Minnesota, and moved to Mankato in 1987 to attend Minnesota State University of Mankato. He graduated with a Bachelor of Science Degree in Finance. After college he worked for Hickory Tech and Midwest Wireless.

Tim’s Great-Great-Great-Grandfather started the first brewery in New Prague MN in 1884. His name was Albert Minar SR.

Tim has been a homebrewer for many years before opening the brewery. Mankato Brewery will be the first production brewery in Mankato since 1967.
